Ingredients
- ¼ red cabbage
- 1 carrot
- 150g snow peas
- ½ bunch spring onion
- 1 apple
- ½ cup cranberries
- ½ cup pistachios
- ½ bunch mint
Dressing:
- ¼ cup olive oil
- ½ lemon juiced
- 1 teaspoon wholegrain mustard
- 1 teaspoon honey
Method
- Roast pistachios in oven for 10 mins.
- Thinly slice red cabbage, snow peas, spring onion and mint.
- Grate carrot, slice apple into matchsticks.
- Mix chopped salad ingredients together with cranberries and pistachios
- Add olive oil, lemon juice, wholegrain mustard and honey to a jar. Place lid on and shake until mixed together.
Serve salad with dressing!
